Holiday Dressing

Serves 16

300 calories per serving

7.5 oz. package dry cornbread mix

1 cup butter

2 onions, chopped

1 green bell pepper, chopped

6 stalks celery, chopped

1 lb. pork sausage

16 slices white bread

2 tsp. dried sage

1 tsp. dried thyme

1 tsp. poultry seasoning

1 tsp. salt

½ tsp. ground black pepper

½ cup chopped fresh parsley

2 eggs

4 cups chicken stock

Preheat oven to 325°. Grease a 9x13 baking pan with vegetable oil cooking spray. Set aside. As directed on the package, prepare the corn bread. Allow it to cool and then crumble. Set aside. In a large skillet, melt the butter over medium heat. Fry the onions, pepper, and celery until tender. Do not allow to brown. In another skillet over medium-high heat, fry the sausage until browned. Pulse the corn bread and bread slices in a food processor until combined into a crumbly mixture. Move to a large mixing bowl. Add sage, thyme, poultry seasoning, salt, and pepper. Combine in the parsley, cooked vegetable mixture, sausage, and sausage drippings. Finally, add in the eggs and chicken stock. Pour entire mixture into the prepared baking dish. Bake for one hour. Serve warm.
